Ingredients

  • 120 g butter, softened
  • 80 g tahini
  • 1 tbsp. stevia
  • 1 large eggs, beaten
  • 3 tsp. vanilla extract
  • 25 g coconut flour
  • 1 tsp. baking powder

Method

  1. Preheat the oven to Gas Mark 4 or 180°C and line a baking tray with baking parchment.
  2. In a mixing bowl, cream the butter, tahini and Stevia for 3-4 minutes until smooth and shiny.
  3. Add the beaten egg and vanilla extract, and mix well.
  4. Throw in the coconut flour and baking powder, and stir thoroughly.
  5. Drop spoonfuls of the mixture onto the prepared baking tray, press down with a fork and bake in the preheated oven for 10 minutes.
  6. Once cooked, cool on a wire rack and enjoy!
