Ingredients

  • 2 oranges
  • 3 large eggs
  • 100 g stevia
  • 100 ml milk
  • 200 g ground almonds
  • 100 g self-raising flour
  • 1 tsp. baking powder

Method

  1. Preheat oven to Gas Mark 4 or 180ºC.
  2. Lightly grease an 8 inch loose bottomed cake tin and line with greaseproof paper.
  3. Pop the oranges in a saucepan and cover with cold water.
  4. Bring the water to the boil on a medium heat.
  5. Cook for 15 minutes until the oranges become soft.
  6. Drain the oranges and rinse under cold water.
  7. Then coarsely chop them up, removing all seeds.
  8. Put the oranges in the bowl of a food processor and whizz until smooth.
  9. In a large bowl, whisk the eggs and Stevia until they become thick.
  10. Add the milk and mix well.
  11. Gently fold in the oranges, ground almonds, self raising flour and baking powder with a metal spoon and pour the mixture into the prepared pan.
  12. Bake for 1 hour, or until a skewer inserted into the centre comes out clean.
  13. Set aside for 15 minutes to cool.
  14. Slice up and serve with a hot cup of tea or coffee!
