Ingredients

  • 120 g butter, softened
  • 1 tbsp. stevia
  • 1 tbsp. natural honey
  • 1 large eggs, beaten
  • 1 tbsp. ginger
  • 1 tsp. ground ginger
  • 150 g ground almonds

Method

  1. Preheat the oven to Gas Mark 4 or 180°C and line a baking tray with baking parchment.
  2. In a large mixing bowl, cream the butter, Stevia and honey into a smooth paste.
  3. Pop in the beaten egg and mix well.
  4. Throw in the fresh ginger, ground ginger and ground almonds and stir thoroughly.
  5. Drop spoons of the mixture onto the prepared baking tray and place in the preheated oven for 15 minutes.
  6. Remove from the oven and cool on a wire tray, then enjoy!
