Ingredients

  • 100 g uncooked quinoa
  • 30 g sunflower seeds, hulled
  • 30 g pumpkin seeds,, hulled
  • 1 tbsp. agave nectar
  • 1 large egg whites
  • 2 tsp. vanilla extract
  • 2 tsp. ground cinnamon
  • 30 g coconut oil, melted
  • 30 g ground flaxseed
  • 1 large apples, grated
  • 1 small carrots, finely grated
  • 100 g desiccated coconut
  • 30 g raisins

Method

  1. Prepare the quinoa and seeds the night before you intend to make these delicious snacks.
  2. Soak the quinoa in 200ml of cold water and soak the hulled sunflower and pumpkin seeds in 120ml of cold water.
  3. Preheat the oven to Gas Mark 5 or 190°C and line a large baking tray with some baking parchment.
  4. Mix the agave nectar, egg white, vanilla extract, ground cinnamon, coconut oil and flaxseed in a large bowl.
  5. Rinse and drain the soaked quinoa, sunflower seeds, pumpkin seeds, and stir into the flaxseed mixture.
  6. Next, throw in the grated apple, grated carrot, desiccated coconut and raisins and stir the entire mixture thoroughly.
  7. Spread the mixture onto the lined baking tray and smoothen with a spatula.
  8. Bake in the preheated oven for 30 minutes until it has turned a golden brown.
  9. Once cooked, remove the tin from the oven and let it cool down on a wire rack.
  10. Then cut into 12 pieces.
  11. Totally delectable!
