Ingredients

  • 400 gm cod pieces
  • 50 gm breadcrumbs
  • 50 gm plain flour
  • 1 large eggs, lightly beaten
  • 1 tbsp olive oil
  • ...
  • For the Mushy Peas
  • 200 gm peas
  • 2 tbsp crème fraiche
  • ...
  • For the Garnish
  • lemon, wedges
  • salt
  • malt vinegar

Method

  1. Preheat the oven to Gas Mark 6 or 200°C.
  2. Pop the pieces of cod in the flour to coat them and dip them into the egg mixture.
  3. Next, dip the cod pieces into the breadcrumbs, ensuring that they have an even coat of breadcrumbs.
  4. Place the fish on a non stick baking tray, drizzle with the olive oil, and bake for 20 minutes.
  5. Ensure that you turn the fish over 10 minutes into cooking.
  6. In the meantime, pour some boiling water in a medium sized saucepan.
  7. Throw in the peas, bring the water to the boil and cook the peas for 3-4 minutes.
  8. Once cooked, put the peas in a colander and mash them with the crème fraîche.
  9. Serve straight away with some lemon wedges, salt and vinegar!
