Ingredients

  • For the Cheesecake Base
  • 60 gm butter, melted
  • 2 tbsp stevia
  • 1 tbsp cocoa powder, unsweetened
  • 110 gm ground almonds
  • ...
  • For the Cheesecake Topping
  • 50 gm cheese cream
  • 2 tsp stevia
  • 140 gm plain yoghurt, unsweetened
  • 4 medium eggs, lightly beaten
  • 1500 gm dark chocolate, (minimum 85% cocoa solids), melted
  • 1 tbsp cocoa powder, unsweetened

Method

  1. For the Cheesecake Base:
  2. In a large mixing bowl, add the butter and Stevia, cocoa powder and ground almonds.
  3. Then firmly press into a loose-bottomed, 8 inch round cake tin.
  4. For the Cheesecake Topping:
  5. Preheat the oven to Gas Mark 5 or 190ºC.
  6. Mix the cream cheese and Stevia together in a bowl with a small whisk.
  7. Pour in the yoghurt and mix thoroughly.
  8. Then add the eggs, one at a time, stirring after the addition of each egg.
  9. Break the chocolate into pieces and melt on a low-heat in a medium-sized saucepan.
  10. Add the melted chocolate and a tablespoon of cocoa powder into the yoghurt mixture.
  11. Spoon the cheesecake topping onto the chocolate crust.
  12. Smooth the top and pop in the preheated oven to bake for 35 minutes.
  13. Remove from oven and let it cool.
  14. You can eat this cheesecake as it is, or douse it in single cream and top with raspberries.
