Turkey Sausage and Egg Casserole

Ingredients

  • 0.5 cup spring onions, chopped
  • 2 cups non-fat milk
  • 1 non-stick cooking spray
  • 0.5 tsp mustard powder
  • 0.25 tsp salt, (optional)
  • 0.25 tsp black pepper
  • 16 oz egg substitute
  • 4 slices whole wheat bread, cut into 0.5"" cubes
  • 3 pre-cooked turkey breakfast sausage patties, diced
  • 0.25 cup reduced-fat cheddar cheese, shreaded

Method

  1. Preheat oven to 350° F/180° C/Gas Mark 4
  2. Coat a 9x13 baking dish with cooking spray
  3. In a medium bowl, whisk together non-fat milk, spring onions, dry mustard, salt (optional), pepper, and egg substitute
  4. Place bread cubes and sausage on the bottom of the baking dish, pour egg mixture evenly over bread and sausage. Top with cheddar cheese.
  5. Cover pan with aluminum foil and bake for 20 minutes
  6. Remove foil and bake for an additional 40 minutes
  7. Remove from oven and let cool for 20 minutes, then cut into 10 equal slices
