Ingredients
- 1 tbsp green curry paste
- 100 ml coconut milk
- 300 ml vegetable stock
- 100 gm smoked tofu
- 100 gm pak choi, roughly chopped
- 25 gm sugar snap peas
- 2 spring onions, finely chopped
- Salt and freshly ground black pepper, to taste
Method
- Pop the curry paste into a saucepan on a medium heat, for a minute.
- Pour in the light coconut milk and vegetable stock and bring to the boil.
- Next, throw in the smoked tofu, chopped pak choi, sugar snap peas and spring onions.
- Season with salt to taste.
- Lower the heat and simmer for 3 minutes.
- To serve, divide the mixture between 2 bowls and relish the delicious, warming broth!
