Ingredients

  • 1 tbsp green curry paste
  • 100 ml coconut milk
  • 300 ml vegetable stock
  • 100 gm smoked tofu
  • 100 gm pak choi, roughly chopped
  • 25 gm sugar snap peas
  • 2 spring onions, finely chopped
  • Salt and freshly ground black pepper, to taste

Method

  1. Pop the curry paste into a saucepan on a medium heat, for a minute.
  2. Pour in the light coconut milk and vegetable stock and bring to the boil.
  3. Next, throw in the smoked tofu, chopped pak choi, sugar snap peas and spring onions.
  4. Season with salt to taste.
  5. Lower the heat and simmer for 3 minutes.
  6. To serve, divide the mixture between 2 bowls and relish the delicious, warming broth!
