Potato-less Shepherd’s Pie

Serves 2

Ingredients

  • 200 g lean minced beef, (substitute for Quorn Mince if vegetarian)
  • 1 tbsp. olive oil
  • 1 clove garlic, crushed
  • 160 g frozen peas
  • 1 cube beef stock
  • 3 carrots, chopped
  • 0.5 swede, diced

Method

  1. Turn on the oven to 175°C/Gas Mark 3.
  2. Cook off the garlic in a large pan with the olive oil.
  3. Add the mince and brown it off, crumble over the stock cube and allow to simmer to thoroughly cook the beef.
  4. In another pan boil the diced swede and carrots in salted water.
  5. Once soft strain and mash.
  6. Add the peas to the mince before turning out the mixture into a small oven-proof dish, cover with the mashed carrot and swede and bake in the oven for 25 minutes until the mash starts to crisp up.
