Ingredients
- 120 g butter, softened
- 80 g tahini
- 1 tbsp. stevia
- 1 large egg, beaten
- 3 tsp. vanilla extract
- 25 g coconut flour
- 1 tsp. baking powder
Method
- Preheat the oven to Gas Mark 4 or 180°C and line a baking tray with baking parchment.
- In a mixing bowl, cream the butter, tahini and Stevia for 3-4 minutes until smooth and shiny.
- Add the beaten egg and vanilla extract, and mix well.
- Throw in the coconut flour and baking powder, and stir thoroughly.
- Drop spoonfuls of the mixture onto the prepared baking tray, press down with a fork and bake in the preheated oven for 10 minutes.
- Once cooked, cool on a wire rack and enjoy!
