Ingredients
- 1 medium onion, finely chopped
- 20 gm butter
- 2 cloves garlic, finely chopped
- 1.2 litre vegetable stock
- 1 tsp oregano, dried
- 500 gm petit pois
- 100 gm cooked ham, chopped
- Salt and freshly ground pepper, to taste
Method
- Pop the butter in a medium-sized saucepan on a medium heat, and melt it.
- Throw in the chopped onion and garlic and cook for 3 minutes.
- Next, pour in the vegetable stock and add in the oregano.
- Bring to the boil and simmer for 5 minutes.
- Add salt and freshly ground pepper to taste and simmer for 5 minutes.
- Place the peas in the stock and bring to the boil again.
- Cook for 2 minutes and remove from the heat.
- Whizz the mixture in a blender until it is smooth and soft.
- Top with some sliced ham and enjoy!
