Pea & Ham Soup

Ingredients

  • 1 medium onion, finely chopped
  • 20 gm butter
  • 2 cloves garlic, finely chopped
  • 1.2 litre vegetable stock
  • 1 tsp oregano, dried
  • 500 gm petit pois
  • 100 gm cooked ham, chopped
  • Salt and freshly ground pepper, to taste

Method

  1. Pop the butter in a medium-sized saucepan on a medium heat, and melt it.
  2. Throw in the chopped onion and garlic and cook for 3 minutes.
  3. Next, pour in the vegetable stock and add in the oregano.
  4. Bring to the boil and simmer for 5 minutes.
  5. Add salt and freshly ground pepper to taste and simmer for 5 minutes.
  6. Place the peas in the stock and bring to the boil again.
  7. Cook for 2 minutes and remove from the heat.
  8. Whizz the mixture in a blender until it is smooth and soft.
  9. Top with some sliced ham and enjoy!
