Ingredients

  • 150 ml whipping cream
  • 70 ml strong black coffee
  • 60 g dark chocolate, broken into pieces
  • 1 tbsp. stevia
  • 3 medium egg yolks

Method

  1. On a low heat, warm the cream, coffee and chocolate pieces, in a medium-sized saucepan, until the mixture becomes shiny and smooth.
  2. This takes 3-4 minutes.
  3. Ensure the mixture doesn’t boil.
  4. Next, remove the chocolate mixture from the burner.
  5. In a separate large mixing bowl, whisk the Stevia and egg yolks together until the mixture becomes fluffy.
  6. This takes 2-3 minutes.
  7. Add the egg mixture to the chocolate mixture, stirring to combine.
  8. Place the saucepan back on a low heat and whisk once again until the mixture becomes thick, which takes 3 minutes.
  9. Allow the mixture to cool.
  10. Pour the mixture into glass tumblers and chill for at least an hour.
  11. Pipe with a little whipped cream and enjoy!
