Mango and Strawberry Muesli

Serves 4

Ingredients

  • 150 g porridge oats
  • 1 apple, grated
  • 80 ml almond milk, unsweetened
  • 80 ml apple juice
  • 2 tbsp. honey
  • 0.5 tsp ground cinnamon
  • 300 ml water
  • 250 g soya yoghurt
  • 1 small ripe mango, in small chunks
  • 200 g strawberries, quartered

Method

  1. Mix the oats, grated apple, almond milk, apple juice, honey and cinnamon in a saucepan.
  2. Place pan on a medium heat, adding the water.
  3. Bring the mixture to the boil and simmer for 3 minutes.
  4. Stir in the yoghurt, strawberries and mango.
  5. Spoon this mixture into bowls and top with the remaining fruit.
