Lamb Cutlets with Polenta Mash

Ingredients

  • 4 tbsp olive oil
  • 500 gm lamb cutlets
  • 4 cloves garlic, minced
  • 3 tsp fresh rosemary leaves, finely chopped
  • Salt and freshly ground pepper, to taste
  • 100 gm instant polenta
  • 8 tsp instant gravy granules
  • fresh thyme, sprigs

Method

  1. Pour the olive oil in a large frying pan and fry the lamb cutlets for 1 minute on each side on a high heat.
  2. Reduce the heat and add the garlic and rosemary.
  3. Cook for a further 2 minutes at least, depending on how well done you like them.
  4. Season your cutlets with some salt and freshly ground pepper.
  5. Cook the instant polenta as per instructions on the packet, and stir the rest of the olive oil into the polenta.
  6. Make the gravy up as per instruction.
  7. Spoon the polenta onto 2 plates, top with gravy and lamb cutlets.
  8. Garnish with some thyme and tuck in!
