Ingredients

  • 1 medium onion, finely chopped
  • 3 cloves garlic, finely chopped
  • 1 stick celery, finely chopped
  • 1 medium courgette, roughly chopped
  • 1 medium broccoli head, chopped
  • 1.5 litre vegetable stock
  • 120 gm green beans, chopped
  • 120 gm green peas
  • 120 gm asparagus tips, trimmed and|r|nsliced into inch long pieces
  • 100 gm spinach
  • salt and freshly ground pepper
  • Parsley, to garnish

Method

  1. Put the olive oil in a large saucepan.
  2. Then, fry the onion, garlic and celery for 2-3 minutes on a medium heat.
  3. Mix in the courgette and broccoli and cook for 5 minutes.
  4. Pour the stock in and bring the entire mixture to the boil.
  5. Simmer for 2 minutes, then stir in the green beans, peas, asparagus and spinach.
  6. Simmer for another 5 minutes until the vegetables are cooked through.
  7. Season with salt and freshly ground black pepper.
  8. Whizz in a blender and serve.
  9. Garnish with parsley.
  10. Delectable!
