Ingredients
- 1 medium onion, finely chopped
- 3 cloves garlic, finely chopped
- 1 stick celery, finely chopped
- 1 medium courgette, roughly chopped
- 1 medium broccoli head, chopped
- 1.5 litre vegetable stock
- 120 gm green beans, chopped
- 120 gm green peas
- 120 gm asparagus tips, trimmed and|r|nsliced into inch long pieces
- 100 gm spinach
- salt and freshly ground pepper
- Parsley, to garnish
Method
- Put the olive oil in a large saucepan.
- Then, fry the onion, garlic and celery for 2-3 minutes on a medium heat.
- Mix in the courgette and broccoli and cook for 5 minutes.
- Pour the stock in and bring the entire mixture to the boil.
- Simmer for 2 minutes, then stir in the green beans, peas, asparagus and spinach.
- Simmer for another 5 minutes until the vegetables are cooked through.
- Season with salt and freshly ground black pepper.
- Whizz in a blender and serve.
- Garnish with parsley.
