Gammon Steak with Mixed Veggies & Sweet Potato Mash

Ingredients

  • 600 g sweet potatoes, peeled and diced
  • 150 g carrots
  • 150 g green beans
  • 150 g broccoli
  • 1 tbsp. butter unsalted, melted
  • 100 ml single cream
  • 150 g tomatoes, sliced
  • 4 200g gammon steaks
  • Salt and freshly ground pepper to taste

Method

  1. Cover the sweet potatoes with cold water.
  2. Bring to the boil, then lower the heat and simmer for 15 minutes. Add the carrots 8 minutes in, and the green beans and broccoli 12 minutes in.
  3. Drain the vegetables.
  4. Mash the sweet potatoes with the butter and single cream.
  5. Season with salt and pepper to taste.
  6. Brush both sides of the gammon steaks with melted butter. Season with black pepper and grill under a preheated grill on a medium-heat for 4-5 minutes on each side until they are cooked and the fat becomes crispy.
  7. To plate up, serve a steak per person with a side of sweet potato mash and some sliced tomatoes, green beans, carrots and broccoli.
  8. Garnish with some slices of lemon and enjoy!
