Ingredients

  • 200 g ground almonds
  • 100 g self-raising flour
  • 2 tsp baking powder
  • 175 g butter
  • 100 g stevia
  • 3 large eggs
  • 1 tsp. vanilla extract
  • 100 ml almond milk
  • 75 ml cold espresso

Method

  1. Preheat oven to Gas Mark 3 or 160ÂșC and grease a loaf tin.
  2. In large bowl, whisk together the ground almonds, self raising flour and baking powder.
  3. Beat the butter until it is soft and add the Stevia.
  4. Next, beat the mixture for 2 further minutes.
  5. Mix in the eggs, one at time.
  6. Then add the vanilla extract and beat in half of the almond flour mixture, stirring thoroughly.
  7. Next, beat in the almond milk, espresso and the remainder of the almond flour mixture until the mixture has combined well.
  8. Bake for 45 minutes to an hour, or until the top turns golden brown and a skewer inserted in the centre comes out with only a few crumbs attached.
  9. Turn out onto a wire rack to cool.
  10. Then, slice to serve.
  11. Truly scrumptious!
