Coconut Chia Breakfast with Berries

Ingredients

  • 300 ml coconut milk
  • 120 ml water
  • 40 gm chia seeds
  • 75 gm ground almonds
  • 1 tsp vanilla extract
  • 1 tbsp natural honey
  • 2 tsp ground cinnamon
  • 50 gm blueberries

Method

  1. Pour the coconut milk in a bowl.
  2. Add the water, chia seeds, ground almonds, vanilla extract, natural honey and ground cinnamon, and mix thoroughly.
  3. Pop the mixture in the fridge overnight.
  4. Remove from the fridge and divide into 2 bowls.
  5. Top with blueberries and tuck in!
