Serves 3

Ingredients

  • 1 cup carrots, sliced
  • 0.5 tsp orange peel, finely shredded
  • 1 cup orange juice
  • 1.5 cups ice cubes
  • 3 pieces orange peel curls, (1 inch)

Method

  1. In a covered small saucepan, cook carrots in a small amount of boiling water about 15 minutes or until very tender.
  2. Drain well.
  3. Cool.
  4. Place drained carrots in a blender.
  5. Add finely shredded orange peel and orange juice.
  6. Cover and blend until smooth.
  7. Add ice cubes; cover and blend until smooth.
  8. Pour into glasses.
  9. If desired, garnish with orange peel curls.
