Broccoli & Stilton Soup

Ingredients

  • 1 medium onion, finely chopped
  • 4 tbsp olive oil
  • 2 kg broccoli, chopped
  • 300 gm celeriac, peeled and cubed
  • 1 litre vegetable stock
  • 100 gm stilton cheese
  • parsley, to garnish

Method

  1. Cook the onions in the olive oil on a medium heat for 3 minutes.
  2. Stir in the broccoli and celeriac and cook the vegetables for 3-4 minutes.
  3. Pour in the vegetable stock and bring the mixture to the boil.
  4. Then lower the heat and simmer for 20 minutes until the vegetables are tender.
  5. Remove from the heat and let cool slightly.
  6. Stir in the cheese until it has melted.
  7. Purée soup in a blender or with a hand held blender or a food processor.
  8. When you are ready to eat the soup, reheat it and ladle it into 4 soup bowls.
  9. Garnish with parsley to finish.
  10. Totally scrumptious!
