Brie and Caramelised Onion Stuffed Burgers

Serves 6

Ingredients

  • Onions:
  • 2 tbsp. olive oil
  • 1 large onion, thinly sliced
  • 0.5 tsp salt
  • Mushrooms:
  • 2 tbsp. butter
  • 226 g mushrooms, sliced
  • Burgers:
  • 900 g ground beef
  • 0.5 tsp salt
  • 0.5 tsp pepper
  • 125 g brie cheese, cut into small pieces

Method

  1. Pre-heat the grill to a medium heat.
  2. Heat the olive oil in a large frying pan and cook the onions with pinch of salt until caramel brown in colour and soft.
  3. Do not let them get crispy!
  4. Place the onions on a plate for later and keep the pan for cooking mushrooms.
  5. For the burgers, put the beef, salt and pepper in a large bowl.
  6. Mix by hand to combine well and divide into 6 even portions.
  7. Take half of each portion and form into a thin patty.
  8. Top each thin patty with some of the brie and onions, then top with the other half of each portion and form around cheese and onions, into one large patty.
  9. Place the burgers under a preheated grill and cook according to your preferences.
  10. While the burgers are grilling, cook the mushrooms in a little butter.
  11. Once the burgers are cooked remove them from grill and allow to rest for 5 minutes before serving.
  12. Layer mushrooms and onions over the cooked burgers and serve with a side salad.

Chefs Tips

  • You can cook the burgers to your cooking preferences: For ‘medium’ on pre-heated grill cook for 5 to 6 minutes per side. Cook slightly less for medium-rare and slightly more for medium-well.
